It comes in two main guises — the very soft smeerleverworst for spreading and a firmer, sliceable version — and every region and butcher has a slightly different seasoning. It was, and remains, everyday broodbeleg: the filling for a workday sandwich as much as a plate at the drinks hour.
The art of the pairing
Since there is nothing to cook, the craft lives entirely in choosing and combining. Buy the best liver sausage you can find, because a dull one cannot be rescued. Then set it against the right partners: dense, cool roggebrood to carry the richness, and something sharp or sweet to lift it — grainy mustard, a slice of gherkin, thin raw onion, or the very Dutch streak of dark appelstroop, whose tart sweetness plays against liver exactly as fruit does against pâté.
Leverworst on rye is butcher's-shop food with nothing to hide: good sausage, good bread, and a little sharpness to wake it up.
Cut it into small pieces, serve it at cool room temperature alongside cheese and pickles, and pour a jenever. It is the plainest thing on the borrel table and, in the right hands, quietly one of the best.

Choose your sausage
Pick your style of leverworst: the soft, spreadable smeerleverworst or a firmer, sliceable coarse one. Buy it fresh from a butcher if you can — the difference between a good and a bland liver sausage is enormous.

Prepare the rye
Cut the dense roggebrood into thin slices and butter them lightly. The cool, faintly sour, close-grained rye is the traditional foil to the rich, soft sausage, and a thin scrape of butter stops it drying the mouth.

Spread or lay
Spread soft leverworst thickly across the rye, or lay slices of the firmer kind so they cover the bread. Keep the layer generous — this is a topping you taste, not a garnish.

Add sharpness
Top with a little grainy mustard, a few gherkin slices, or thin red onion to cut the richness. For the sweet-savoury version, streak over a little appelstroop instead — a very Dutch pairing with liver.

Grind over coarse black pepper and cut each slice into borrel-sized pieces. Serve at once, at cool room temperature, as part of a spread with cheese and pickles.
