The tosti is the humblest hot lunch in the Netherlands and one of the most beloved — a ham-and-cheese sandwich pressed flat and cooked until the crust ridges golden and the Gouda inside runs molten. Every café, station kiosk, and swimming-pool canteen keeps a tosti press warm, and generations of Dutch children learned to make their own the moment they were tall enough to reach the counter.
It belongs to the same postwar decades that gave the country its snackbars and lunchrooms, when electric sandwich presses arrived in Dutch kitchens and turned a plain buttered sandwich into something hot and a little indulgent. The word itself is simply the Dutch clipping of "toasted," but the tosti has long since become its own thing — as much a fixture of everyday life as the boterham it descends from.
The cheese does the work
A tosti lives or dies on its melt. Use young to lightly aged Gouda, which turns silky rather than oily, and put a layer on each side of the ham so it seals the sandwich shut and reaches every corner. Grating the cheese instead of slicing it speeds the melt so the inside is ready before the outside scorches — a small trick that makes the difference between gooey and grudging.
The ideal tosti pulls into strings when you tear it, the bread shattering crisp while the centre stays soft and molten.
Butter, not oil, on the outside
Butter the outer faces, not the pan, and the bread crisps into a shell with the faint ridging a press leaves behind. Serve it plain, or in the Dutch way with a smear of mustard or a splash of curry ketchup alongside. And cut it on the diagonal — a tosti sliced straight across simply isn't a tosti.

Build the sandwich
Lay one slice of cheese on the bread, then the ham, then the second slice of cheese. Cheese on both sides is the trick — it glues the ham in place and seals the edges so nothing leaks as it melts. Close with the second slice.

Butter the outsides
Spread soft butter thinly across the two outer faces of the sandwich. This is what browns the bread and gives a tosti its ridged, crisp shell, whether you cook it in a press or a pan.

Press or pan-fry
In a tosti press, close it down and cook 4–6 minutes until deeply golden. In a dry frying pan, press with a spatula or a second pan on top, turning once, until both sides are crisp and the cheese has run to the edges.

Rest and cut
Let it sit for a minute so the molten cheese firms just enough to hold. Cut corner to corner — the diagonal is not negotiable in a Dutch kitchen — and eat while the inside still pulls into strings.
